T-58 yeast

I am planning a batch of American wheat beer. I was reviewing my current stock of yeast and was wondering if T-58 would work ok...my other option is Safale us-05.

My experience with T-58 is that it’s full (too full) of character. I use US-05 for my American wheats.

That is a good idea certainly, but I am trying to use up some of the yeast I have on hand.

I've done wheats with T-58, and they came out nicely - it gives a modest Belgian-y/phenol/spicy character. It won't be an American wheat, but it'll be very drinkable.

Use both, 58 and 05. Ive used 58 and Bry-97 with very good results.

I used t-58 with BlueBalls Belgian wit and it came out great. fermented at 64F.
i'm brewing another batch this weekend and will use it again.
