I am planning a batch of American wheat beer. I was reviewing my current stock of yeast and was wondering if T-58 would work ok...my other option is Safale us-05.
 
Save the T-58 for a nice Belgian Quad or something like that.

Why not use a hefe yeast?
 
I've done wheats with T-58, and they came out nicely - it gives a modest Belgian-y/phenol/spicy character. It won't be an American wheat, but it'll be very drinkable.
 
I used t-58 with BlueBalls Belgian wit and it came out great. fermented at 64F.
i'm brewing another batch this weekend and will use it again.
