Sorry if this is a stupid question. But if I am making a 10 g batch and pitch a pack of US-05 and a pack Nottingham - when the yeast are reproducing in the early stages of fermentation, is there cross breeding? A US-05 yeast cell fancies a Nottingham?... Do they create hybrid yeast babes? I haven't a clue.

Curious. I've done it before with great results but wondered what was going on under the hood.

Yeast reproduce by budding, so they simply duplicate themselves without need for a partner of any sort.

Otherwise just imagine the hybrid names we'd have going on!

The more aggressive yeast does most of the fermentation and has most of the effect on yeast flavors, but they both have some effect. In that case, Nottingham would do the majority.

I agree Notty works faster and handles more sugar conversion. But I think the US-05 has some clean up and taste elements that add to the batch flavor in good ways. My own palette likes US-05 a little better but just a personal preference.
