Hey all,
Funny story to share, and maybe it's more common that I think.
Made a witbier Saturday with a low post-mash gravity, so I added 1 lb. of DME and ended with a spot-on target OG of 1.04. Decanted my 1L yeast starter, pitched, and popped the 6gal of wort in the fermenter and went on with my life. 24hrs later the blow tube was bubbling away in the bucket and a beautiful, thick krausen had formed. Now, for this brew I am using a Big Mouth Bubbler with one of THOSE lids (prone to popping off), so I add 2 2.5-lbs weights connected by rope to hold it down.
Well, what do you know!
Last night I looked in the fermentation chamber and saw the krausen had lifted that lid, slid off the 5-lb weights, and was liberating itself down the side of the Bubbler and into the fermenter.
With all the yeast activity and outward pressure I'm not too concerned about infection, but lesson learned.
Now I've got 10-lbs total on there.
Let's hope it holds!
