Hi everyone,
Brewing my first batch of cider. Fermenting 2, 5-gallon batches of cider. Primary ferment has been going for just over 2 weeks and has slowed down. I'm planning to rack the cider into carboys for a secondary ferment. Before racking I'm planning to place to buckets in an out building for a week to allow everything to settle. The building is insulated but not heated so temperatures will probably swing between 50s in the evening to 70s in the day. Will this adversely affect the cider?

Red Star Dry Wine Yeast (yellow package). It's what the guy at our local home brew store recommended. We also added Campden tablets before adding the yeast.

Possibly Premier Blanc or Pasteur Champagne. ?
The yeast should be fine.

I would worry about suck-back from the air lock, and too much air exposure.
