This is my first attempt at making cider, been home brewing for close to 10 years now . Tasted the cider and it has a sweet but a little tart flavor to it, almost wanted to drink it like it was , but not my intended purpose.
I put 5 gallons of cider in a glass carboy with 2 crushed campden tablets and let sit for 4 days. Temperature was set at 64 F in my home brew fermentation chamber. After the 4 days, I pitched 1 packet of Nottingham yeast. After 2 days fermentation kicked off and has been slow bubbling for 2 weeks now. My question is when it stops bubbling, should I let it set on the yeast cake as I would with my home brew? I plan to put it into a corny keg and carbonate like my home brew.
Any suggestions or comments are greatly appreciated.

I leave my ciders in the fv, usually 4 weeks, occasionally 6 weeks (same as I do my beer). When I first started making cider I would bottle and drink as soon as it was finished. I definitely like it better when it has had some time to condition on the yeast for a while. Good luck!
