So this is a random question...

Lambic.info tells me that Cantillon uses fruit that has been flash frozen so they can brew throughout the season and not let the seasons/harvests dictate when they can brew certain beers.

Is it safe to assume that in a traditional sense they would ideally use fresh or frozen fruit but never fruit that has been cooked or turned into a syrup?

The reason I ask this is because im having a hard time understanding why mamouche is made with elderflowers and not the berries. I think its interesting that someone decided that the flowers would contribute more (or a better character?) to a lambic than the fruit. However, the stipulation being you shouldnt consume fresh elderberries, they need to be cooked in order to neutralize the glycoside which could induce cyanide poisoning.
 
probably include it in a box with 8 other bottles you have no interest in and charge the equivalent of $50 for it. Someone will proclaim it a good deal and post how they ordered the box :). It will sell out in an hour and we can continue to laugh at how stupid us american's are.
 
Blanch em, render bacon, sear the **** out of them, sliced garlic in the last 45 seconds, deglaze with some Gueuze.



missing shallots but yeah, never thought of using gueuze to deglaze... I'll try it for sure
 
I think I've only ever been on there once and it was 100% seamless. ******* etre sometimes takes minutes to load a page... I miss the 90s and all, but not its internet speed.

The script that manages the bottle limits in your shopping cart is also ****** up. It's pretty annoying to miss out on a limited release because you add the right number to your cart, and then the cart screws it up and keeps changing that number or removing the bottle for no reason.
 
I had a 2012 last week (with jonbonbrodie). It was quite odd, maple syrup and quite boozy, hard to say anything too good about it and I liked the mapley flavors. It took 4 or 5 of us to get through a 375.

well that is not promising.. hahaha... should probably drink one soon

I doubt the reason they used elderflowers instead of elderberries was the necessity of cooking the elderberries. Had they wanted to make an elderberry lambic, they would have simply prepared the fruit as is needed. I strongly suspect the actual reason is that they didn't want to use elderberries, as elderberries and elderflowers don't taste much alike at all, despite coming from the same plant.
