How awesome! Really cool seeing new blenders and Brewers starting up. I hope to try some of Brette-Elle's Lambic in the coming years.


Granted I don't speak Flemish and couldn't read the article, have any of the Brewers/owners blended or brewed lambic in the past?

Well, the name Panneels rings some bells, probably coincidence
 
Anyone know what kind of cheese Cantillon & 3F sell in their stores? What would be a similar cheese we get here in the U.S. (aside from being washed in lambic)?

IIRC, it's a soft cow milk type cheese, but can't find something that's as firm as they have there, only the triple creme. Is it like Camembert?

My friend you are looking for a cheese called Comte. It's a semi-firm cow's milk cheese deriving from France. Cantillon washes the rind with their Gueuze I believe.

The cheese they sell to go isn't the comté I believe. It's a softer cheese made by Dupont
 
Yea, it doesn't look like Comté, it looks like this (Wavreumont?):

Just wondering if there was a cheese like it we get in the U.S. or if we have to find some small cheese shop that orders direct from small producer's in Europe to get some.
 
You're right. I was thinking of Chez Moeder's cheese. So damn good.

Plusnim I'm a little drunk and pissed off at a certain veterinary clinic that may be about to be hit with a few civil lawsuits. But that's off-topix
They were selling comté at Cantillon as well last weekend. But just a plate to eat there

...it's basically a North Belgium/Netherlands cheese that they just know of as "kaas," which I learned from my gf means "cheese." The closest thing here is soft gouda - I actually saw something extremely similar at Whole Foods last week in the Gouda section.

I adored that stuff btw. Brought home some, but it's long gone.
