No experience with hopping with saaz.

I do occasionally hop with citra, which goes with cider surprisingly well. At first I thought the citrus character would clash with the cider but quite the opposite. It's my go to cider hop these days.

How long do you let the hops steep?

6-10 days. If I'm feeling lazy (as usual) I'll put hops in mesh bag and add a few days after primary kicks in. That way when I transfer to glass I don't have to worry about fishing out hops.
