I got a bottle of cider in the xmas swap this year that the guy told me to wait until next xmas to drink...can't wait

I don't think age will do anything to mine, it's already 1.5 yrs old. Stuff is tough. Likely won't make cider again. Funk that.
 
Cider really requires blending or it is Terrible. And it's tough to make great cider that can be bottled , much better in a keg with a little fresh cider added to it for flavor

Yeah, didn't know what I was getting into. Thought it was just juice/yeast and done. Then started reading about all these extra steps and just said funk it and bottled. Drunk friends drink it to get drunker. Oh well.

I would disagree. I don't like sweet ciders. Give me a nice dry cider with a little funk, no backsweetening.

Wasn't a fan of apfelwein, won't make that again. I'll stick to just juice, little or no added sugar, from now on.
 
So my commute is 35MPH -> 20MPH school zone -> 45MPH.

Heading back from lunch and this old bish brakes down to 28 in the non-active school zone. WTF is that? Ticketable speeding if it was active, way too slow otherwise. Then when it hits 45 she just bounces from 33-40 or so. Happens to me every day. I don't get how everyone is so dumb. I'm not one to roadrage, I drive slow right hand lane on hwy usually.. but the 25s in a 35 is infuriating.

Not as bad as the people who don't hit the speed limit by the time they get to the bottom of the on-ramp and you're stuck behind them... I can't even stand it. Talk about infuriating.
 
Bottling a gallon batch of simple cider this weekend. Cider is a bit meh but it's nice to have the odd one in the summer. I just make the ocasional batch for fun. This last one I used cloudy cider, S-05 and few drops of pectic enzyme. Simple as you like.

Not much to it it seems. Just takes ages to finish (months). They all need time to mellow and age in my limited experience especially if bumping the ABV with sugar.

If it's drinkable I'll fire a bottle to the winner along with some other boring stuff when it's ready.
 

Yeah. I drive dead on speed limit or a little below, but stay the hell away from other drivers at all costs if possible. I don't trust other people behind the wheel. I encounter this every time I visit my hometown; it's just a bunch of old people and farmers without a care in the world and in no hurry.

See, people started talking enzymes and pasteurization and all the funks I had left went right out the window. If it really is that easy, I may have just used the wrong yeast. Didn't know you could use 05.. I might have to try to find something to ferment 1-2 gallons at a time. Wouldn't mind having it around, if it was decent.
 
Oh, I know, I've got some rice wine I could send too. I stashed a couple bottles before I quit making it, never did really like it. I know @ChefRex likes the stuff, maybe someone else would too

You can use any yeast you want

Nah, I'll just send a bunch of unlabeled bottles. It will be a mix of good and sh*tty commercial beers and homebrews. I'll use a silver sharpie to label each one with a code so I know what you're drinking, but you don't.

Damn, maybe that should be it's own maw-style thread. I'd say bmaw (blind maw), but that's taken...

  • Buy the gallon glass jugged ciders,
  • pour a bit out into a sanitized vessel to give you some headspace and to store for later top up.
  • Sprinkle in the yeast 1-2 tsp +/- nutrient,
  • few drops of pectic enzyme if the cider is cloudy and you want a clear cider. Pop on a bung and airlock/blow off and ignore it for a week.
  • When things die down, top up or rack and top up.

Once it clears and stops bubbling it's done. (that takes ~2months) Pop it in the fridge for a few days and bottle like you would a gallon of beer. ~1oz of corn/table sugar soln.

The gallon fermentors are about $8. A gallon of good apple cider in a glass carboy is ~$8

Thanks. Saved that, I might give it a go one more time.. or a few if I actually get the 1-2 gallon setup. Wife loves hard ciders, as do all my friends. Why can't the people I know just enjoy good beer?

I'm not sure what happened, I mean I have a pretty good idea.. but for it to have zero apple properties left? I assume the yeast was the culprit. Montrachet wine yeast in this case. Tried a cider someone brought to the LHBS, think they used S-05.. it tasted like pear juice. It was funking awesome.
 
I don't like a sweet cider, I just like a cider to have an apple flavor and not be sub 1.000 and taste like a wine. I have a cider keg and after I drink a gallon or so, I top it off with a gallon of frozen cider from when we pressed our apples in the fall. Then I shake up the yeast and let it sit at room temp in the keg for a couple weeks to ferment out some more than put it back on gas and drink away.

It needs to age. Sent my last bottle of 2014 JAOM to a @passedpawn recently. He said he liked it but people be being polite and all. I've got 9 bottles of 2015 aging. I don't drink them often. Going to wait till they are a year old.
 
I'm skeered to try a mead too. My brother made two meads, they both tasted like rubbing alcohol. My friend made a mead, it tasted like syrup it was so sweet. Both undrinkable.

My last attempt at mead tasted like rubbing alcohol, until it had aged a year. After which it just tasted like disappointment and broken dreams.

JAOM is easy though. You still need to age it a bit though, in spite of what some say, IMO.

Cmon man! I really did like it! Perhaps I'm not a great judge of such things, but I know when I like something :)
