Hello to all. I am looking for recipe's to make chokecherry wine. I had made it at least 6 or 7 years ago but it was pretty much as a port. It was good and friends loved it. Now with a huge amount of berries right now I am collecting gallons of them along with elderberry and sarvisberries (juneberrys). Crazy amount so I am getting as much as possible. I would take recipe's for the last two as well. It'll give me plenty to do in the fall/winter. Thanks so much from Montana.
 
I don't like elderberry wine by itself much, but I often do add them to my blackberry wine, or the chokecherry, and definitely great with my black currant wine. Last fall, I did 3 gallons of elderberry, and ended up using it for blending as by itself its a bit insipid and almost a slimy mouthfeel but as a blend ingredient, it gave depth and some nice body.
 
Interesting, as our elderberry wines have been our favorites, but only after two years' aging....This year will be the first we won't be able to make five gallons because the stupid county sprayed the roadsides before our roadside elderberry harvest was complete.
