    Beer frozen... Help!

Unfortunately my homebuilt temperature controlled fermentation freezer went haywire and froze my Hefe Weizen in the making. Primary fermentation was done (one week in, no more bubbles). Should I repitch or will any yeast (wlp300) have survived at all? Help :(

What the funk is going on with my Hefe?

I am trying to brew a German hefeweizen - it's my favorite kind of beer. I've been trying for about 2 years to get the brew I'm looking for. I love the banana clove bubble gum flavor in a good Hefe but can't seem to get anywhere close to it. So I am stumped. Every time it gets a weird flavor...

Two yeast, one beer! (Fermentation and priming)

Greetings fellow brewers, I've been reading a bit on how I should go about to isolate yeast strains from my favorite beers. Apparently, some commercial brewers use two different yeast strains at separate times in the brewing process. One for fermenting and one for priming. One popular beer for...

    Flaked Wheat

Hi All, So preparing for my third brew (first hefeweizen) and was looking over the ingredients I was given by the local home brew store. I saw I have a bag of flaked wheat, is this something that should be included with the mash in the initial wort boil? Or something added right at the end...

    Newbie Experiment

all, just tasted my fist batch of amber ale.... tasted great for a first go, but I am super pumped to start experimenting. I figure the only way to truly learn is to take some wacky steps. So, I plan on purchasing a 2 gallon Hefeweizen extract, and I want to know if any of the following...

    Greetings from Aiken, South Carolina

Recently retired and recently started brewing beer. I wonder if the two are related? I have completed a half dozen 2-gallon extract and/or partial grain brews and moved into 5 gallon all grains. I'm still working on setting up my brew station with a 15 gal. kettle, 10 gallon cooler mash tun...

    First Batch Questions

Hello fellow homebrewers, I'm a complete beginner when it comes to this stuff and my very first batch is nearly done fermenting. I have a few (probably stupid) questions. Firstly, I ordered an equipment kit from Homebrew Supply.com that came with all kinds of extra toys (immersion wort...

Did I add too much priming sugar?

I just bottled 5 gallons of hefeweizen yesterday. Fermented for 15 days at around 68 degrees. I used an online priming sugar calculator to calculate how much I needed. I ended up going with 6.3 oz of corn sugar to bring 5 gallons to a co2 volume of 3.3. Looking back, I'm thinking this may have...

Off taste hefe, New brewer needs help!

I just tried my bottle first bottle of a partial mash hefeweizen that I brewed and it has a real sweet bubblegum with little or no bannana or cloves taste. This is my first time brewing a hefeweizen and it does not really taste like any hefeweizens I have had. It is way too sweet. The beer seems...

    Questions on a hefeweizen recipe

Any input on this recipe would be appreciated! Hefeweizens are tasty summer beers and a good chance for me to try out decoction mashing. I'm assuming 60% efficiency in the mash. This is only my second all-grain, and 60% was my extraction efficiency the first time around. If the decoction...

Hefeweizen: How long should I leave it in secondary?

Today I racked my hefeweizen to secondary. I am aware that many people prefer to bottle directly after primary fermentation, and skip secondary as this will further clarify a beer that is supposed to be cloudy. I felt that I wanted a slightly lighter taste in my hef , and thought that getting it...

    Low OG why?

Hello all, I brewed my fourth beer today, A Hefe. My Recipe was 2 Lb Crystal 10L 1.5 Lb Flaked Wheat 0.5 Lb Light Munich I Mashed at 155F for 45 Min in 2 Gallons of water and then sparged in another 2 Gallons at 150F for 20 Min. (I know the volumes should be larger but my current...

    Mash pH questions.

My water is very soft. Ca - 6ppm, Mg - < 1ppm, Na - 7ppm, SO4 - 3ppm, Cl - 4ppm, HCO3 - 12ppm. I've been adding CaCl and MgSO4 to my mashes lately to try and bring up my Ca and Mg levels. I use EZWater to determine the amounts I want. My question revolves around measuring my mash pH and...

Low OG on first Hefeweizen, what now?

I just put my first Hefeweizen into the fermenter but the Original Gravity was lower than I was aiming for. It ended up at 1.043 but I was aiming for 1.052. My guess is that the reason was probably because: I changed my equipment which resulted in less evaporation than in my previous boils...

Hef tastes like I'm drinking raw wheat

My first all-grain brew has been conditioning in the keg for 2 weeks and we just tapped it last night. The orange and coriander are great, were it not for the beer. The taste is like drinking a big mouthful of liquid wheat and the brew doesn't taste at all like widmer hef. It really doesn't...

    First Hefeweizen...Feedback

This is my first Hefeweizen. Brewing this for our annual week at our family camp. Love Hefe's but am certainly no expert in the style. My plan is an easy drinking, thirst quenching hefe with some subtle honey mixed in with the banana/clove undertones that should develop from the strain of yeast...

    Finally back to brewing!

It's been over 6 months since I last got to brew. Getting married took all of my time and money for a little while. I decided to ease my way back in with my first all grain, my first batch grater than 5 gallons, and I built a mash tun from a cooler and a kettle from a 15 gallon keg. The...
