    Carbonation goes away quickly

    Just opened the first bottle on a new batch. Bottled with carb tabs, then 3 weeks on bottle and another 5 days in the fridge. When I open and pour, beer has a decent head and tastes fairly carbed for about 5 mins, then starts losing carbonation fairly quickly. Ideas?

    It seems like Star San is the most popular on the forums, but I read one review that said it isn't safe on plastic. I do all my brewing in 6.5 gallon plastic buckets, so this becomes an important factor. Is Star San safe to use on plastic? If not, what no-rinse santizer do you recommend?

    Stupid newbie question..

    Dumb question, but based on what I have read (and the few batches I've done), there is always a thin layer of sediment on the bottom of the bottles of home brew. Why do commercially brewed beers not have this same issue? Is it related to the larger size of the batches?

    Boiling vs not boiling

    Thanks for the feedback, all. You confirmed what I thought was the case (that hopped LME need not be boiled). I'm about 2 days from bottling a batch of Nut Brown Ale, and getting kind of antsy (sp?) to have a taste!
