    Yeast Suggestions for Cold Basement

I am planning to brew a pale ale this weekend and I am looking for suggestions on what yeast I should use. My current basement temp is around 57 or 58 degrees and I have no good way to raise the temp of my fermentation. I don't think my wife will allow the beer into the upstairs for the initial...

    Toppling Goliath Golden Nugget Clone

Stopped at Toppling Goliath over the weekend and had both pseudoSue and Golden Nugget. I absolutely love both. There is already and extensive thread about cloning Sue, but I can't find much on cloning Golden Nugget. Malt should be pretty easy, the recipe says it is a Golden Promise malt. I...

    Converting a Recipe to Imperial

I had a fun idea to do a Christmas brew each year for family and friends. Part of my idea is to create the recipe myself. I'm thinking of brewing an imperial version of a stout I recently brewed and had a few questions about formulating the recipe. 1- Does "imperializing" a recipe seem like...

New Glarus Apple Ale clone help

I posted this in the all-grain thread and didn't get a response. So I'm thinking of trying to clone (or at least come close to) New Glarus Apple ale. I had a bottle left over from last year and when tasting it, it seems like a brown ale that has sweet cider added. The sweetness is definitely...

    New Glarus Apple Ale Recipe

So I'm thinking of trying to clone (or at least come close to) New Glarus Apple ale. I had a bottle left over from last year and when tasting it, it seems like a brown ale that has sweet cider added. The sweetness is definitely unfermented cider not residual unfermented sugars. My idea is to...

    Dry hopping in corny keg

What is the best way to retrieve a hop bag from a corny keg after dry hopping? I use a weight (4oz mason jar) to sink the hop bag to the bottom. I also keep the keg on gas while dry hopping. I just want to be able to pull the hop bag out easily. Thanks.

    Underattenuated Scotch Ale

I brewed Jamil's 60 Shilling Scotch Ale and it is a little bit underattenuated. The final calculated abv is around 2.2%. I think the taste is pretty decent from the samples I have pulled, but I am concerned about the extremely low alcohol content. Should I attempt to add another .5% alcohol...

Low Efficiency Questions (and a couple of others)

I have done three All-Grain batches so far- one Centennial Blonde, one of Jamil's Ordinary Bitter, and one of Jamil's 60 Schilling Scotch Ale. The first batch I had a yield of a little over 70%, but for the Ordinary Bitter and 60 Shilling I have been around 60%. I'm not quite sure what is...

    Is my water unusable?

I am just starting to gather supplies to go all-grain. I asked my local water utility for a water report. It is missing a few important levels- sodium, bicarbonate- but I'm on a budget and I don't want to drop an extra $40 on a full Ward Labs test. Here are my important levels: Total...

    Fermentation Optimization

I'm looking for ways to optimize some of my brewing processes and I'm not sure if I need to look at regulating brewing temperatures. My basement temperature is a pretty consistent 59-62 degrees, however, we recently purchased our house and haven't spent a summer in it, so I'm not sure how the...

    Wyeast Oktoberfest Yeast Recipe

I inadvertently grabbed the Wyeast 2633 Oktoberfest yeast at Northern Brewer instead of the 2565 Kolsch yeast. Now I am looking for a recipe to brew with the Oktoberfest yeast. I don't really want to brew an Oktoberfest for drinking in midsummer, so I checked out the Wyeast website and...

    Extract Kolsch Recipe

I'm planning on making the Northern Brewer Kolsch <http://www.northernbrewer.com/shop/kolsch-extract-kit.html> kit in a couple of weeks and I have a few questions: 1) Should I add a specialty grain to the kit? I was thinking 12oz of CaraPils. How much of a difference will the specialty...
