    I've had the beer. It's OK, not great, and not what other Trappists are like. And it's kind of expensive. I bought 2-4 packs when it was first introduced, but I don't think I'll buy any more.

    I've never had that difficulty, but in thinking about how I open them I generally give them a twist first - which kind of "breaks" the seal. Then wiggle back and forth while pulling up until the come out. Not necessarily easy, but I've never used a cork puller on one.

    I think you're on the right track. For most homebrewers, over pitching is not an issue, and with a stepped 1 liter starter I think you'll be fine. I've done this in the past, but bought a larger flask just so that I don't have to step them up any more.
