OK guys, im going to make some cider tonight. I was thinking of using the following:

4 gallons of apple cider
30 oz of honey
6 oz molasses

then after primary fermentation is over, rack it to a secondary on top of cinnamon sticks, and 1 vanilla bean for roughly 2 weeks.

I have the following 2 dry yeasts here to use.
Danstar Munich hefe yeast
US-05

My question is, which one of these 2 yeasts should I use to get the sweetest finish possible. If it finishes too dry, im not opposed to back sweetening, but would prefer not too. Also, please keep in mind that I want to carbonate this beverage.
 
ok, so i will just back sweeten it after the fact then I guess. i was reading something on here, where the guy said his us-05 always finished around 1.011, and that would be OK to me. thats not bad in my opinion.
