I’m making homemade chile colorado with rice and beans from scratch. My favorite Mexican beer when making Mexican food is Victoria. I think this beer is much closer to the Vienna Lager style than most other amber Mexican beers.
Fed the masses (daughter’s friends): carne asada, carnitas, mussels, oysters, beans, rice, salsas, and more. Enjoying this gift while I rest; it’s an amazing Czech lager from New Mexico.
Hoping to edit this post later and add to it, but so far, bottled the HM Limoncello. 3# of lemon zest from our tree and 1L Mojave High Desert Gin. Aged on the zest for 1 1/2 years. Stuff is amazing. A little club soda (from the keezer) and ice and it goes down so fast. Going to need a nap later.
