Temp Control from old Refrig

I had a couple of older refrigs that needed to be recycled, so I have pulled out the temp control units, and am planning on using them for a chest freezer kegerator and a fermentation chiller fan control. Both have temp control knobs, but only one looks like it has a sensitivity adjustment. Anyone have an idea of the "normal" sensitivity range for a fridge temp control? Any other problems I could run into on this effort?

Should work for the kegerator, but they probably will not be able to operate in normal fermentation temperature ranges.

Maybe worth a little experimentation. The dial goes from 1 to 9, with the off position at about a minus 7, so I could probably stabilize in the lager range. But I live in the northwest, so ales are fine with a water bath or at worst an iced water bath. Anyway, I rebuilt the old tin housing with just an on/off switch and the temp control, into a 2" by 3" box about 1-1/2" deep. Looks rather cool/ghetto in my eyes, but really not up to BierMuncher style. As bad as my kegerator looks, this will fit right in. Maybe someday I should paint the kegerator extension ring..... Naa
