I'll be doing the cold-fermented Czech lager that I will enter in competitions this fall. 50/50 two row and pilsner, with nothing but imported Saaz hops for bittering/flavor/aroma. What are you all planning? And what glass will you raise to the Force?
 
Brewed a schwarzbier months ago to be ready for May 4th...

I guess I'm brewing a wild ale...

2-row, wheat, Sacc Trois, Lochristi blend, Lacto blend, Czech Saaz.
Plan to have it all funked up and ready to bottle in a few weeks.
I'll probably create split batches with additional cultures at bottling.

92% Pilsner Malt
8% Carahell
WY2206 @ 48 degrees
18 IBU from Hallertauer

It's gonna be my first real try at a 2-vessel No Sparge with my system, which was designed for 3 vessel fly sparging.
 
I grew up Catholic, so I always say May the Fourth Be With You (and also with you). Gonna be drinking on my latest WF lager that I just started carbing yesterday, weather is supposed to be perfect.
