Am I risking contamination by using half a pack of yeast (safeale 05) for a one gallon recipe and saving the other half in the fridge for my next 1 gal brew?
Never considered that before! I always do this and never gave it a second thought. I suppose you'd want to seal it up good and tight if it's going to be a while.
Contamination of your yeast or of your batch? In both cases I vote no - you will probably be fine. Just tear a small hole in the pack and put it in a new ziplock after.
If it's gonna be used relatively soon, then, yeah, should be fine if you practice good sanitation .... I usually just use the whole pack in a gallon, dry yeast is cheap.
