I usually use liquid yeasts, so I'm not too terribly familiar with 05...I'm brewing an AG Pliny clone this afternoon and am wondering if I should pitch one packet of US-05 or two due to the relatively high gravity. I will be oxygenating my wort with pure O2 prior to pitching.

I just did a Pliny Clone yesterday and I pitched two packets of US-05. My OG was 1.079. I used #15 of 2 row but I recall doing the same when I did Vinny's version in BYO

Are they 5 or 11 gram packets? I'd pitch 2 11g packets for Pliny ( mine was 1.071 )

You could also check out the yeast pitching calculator on www.mrmalty.com

I went with 2 packets on mine. Extraction was a little low and I finished out at 1.071. I rehydrated both packets (11.5 g) and had a decent krausen in about 6 hours. I also aerated the wort with pure O2 (about 30 sec)
