brewed an RIS with maple...

OG was 1.102 when I pitched 22 grams of US-05 on 6 August.

After a few days I dumped in a quart/32 oz of pure maple syrup. was about 4.5 in the keg/fermenter so now about 4.75 gal total volume.

I'm guessing the maple added about 12-13 points...so estimated/corrected OG is 1.114/1.115 ???

On the 14th...only 8 days...

gravity check is 1.032

I'm at 10.7% and maybe still going?
 
You might have added 19 or 20 points. While US-05's attenuation rate is within that, it's already in it's limits for alcohol tolerance. So hope that you get every bit of the 11% they claim and more. Or it's going to be very sweet.

Curious why you went with US-05. I like it for regular pale ales and things that aren't big beers.

What grain/hop bill did you use for your RIS? The addition of maple syrup is an interesting one, looking forward to any followup reports on this post fermentation.

maple is supposedly 1.031 PPG so 31/5 is 6.2 points.. I used 2 pounds and slightly less than 5 gallons...I really don't see 19-20 points.

I've used 05 to go over 13%. give it time....time...

I just kegged a 5 gallon batch of Imperial IPA fermented with two packs of US-05 and my experience suggests that it is not hard to get attenuation and ABV beyond the specs if you pitch enough. And now that I have a clear fermenter I realize that there's also very little lag if you pitch enough - yeast rafts were forming and small bubbles rising with two hours, even if it was a full day before the blow-off was bubbling.

edit - so that's OG around 1.121 and FG around 1.023 for those of you who can't covert plato to SG in your heads.
