Has anyone used the Pacific Ale yeast from White labs before? I am thinking about doing an American Pale Ale with it.. thoughts?
 
No, I'm sure nobody has ever done that or even considered it.:D

I think you should try it out and give us some feedback on how it ferments and the flavor it imparts to the beer.....unless someone else might have done exactly what you suggest.:tank:
 
I love it. Fruity, and does not attenuate like WLP001, but close if it's not a very high OG. Goes great along with fruity-style hops. I try to use it as often as I can in IPAs. But don't panic if it seems slow on the first generation. I've noticed it's slow finisher for a first pitch.

But it seems like it takes some of the hoppiness with it when it settles, I'm not 100% sure though. But if you're kegging you need to flip that keg upside down like a hefeweizen before serving or the keg will go pretty dull if you pour out all the good stuff at the bottom in one sitting.
