Hello all!

So three days ago I brewed my second batch. We brewed the NB Black IPA, extract. We used 1 11.5 g packet of Safale US-05 but a tiny bit spilled (0.1 or less of the total rehydrated packet). What I've been reading seems to say we should have used more than 1 packet to begin with. First, is this true? OG of the beer was 1.074 (should have been 1.075). Second, should we add some more yeast at this point?

you can use just one packet, but its best to start off with two that have been re-hydrated and then added to your cooled wort.

but you should be fine. just keep to temp control land give it a bit of extra time and your set!
 
If it's been three days then the yeast have likely already completed the lag phase and moved on into exponential growth, and maybe into fermentation. If any damage was done, adding more yeast at this point is not going repair the under pitching.

So no, I would not recommend adding more yeast at this point. Your beer will probably be fine, but could have been a little better.

This. One of the keys i've found to improving my beer is Live & learn! :)
