My new pint: Columbus Brown Ale

Wild ale #1, aka what I'm tongue in cheek calling "Windy Acres batch #1 - a Voorheesville style farmhouse ale" after the name and location of my grandfather's farm. I fermented this entirely with yeast harvested from wild apples collected at my grandfather's farm the last time I was there after he died. It is my liquid tribute, about 1.5 years in the making.
So how is it? Very sour, but not overly so. A cidery note, unsurprising given the yeast source. Not perfect, but I love it, and more just amazed my first totally wild ferment is totally drinkable.

Nice! I never lived there, but not far away. Long shot, but if you ever heard of the Gipp pig farm, that was him.

Im a transplant from the midhudson valley so unfortunately, no, I haven’t heard of it

For sure, thanks for the offer! I hit Real McCoy and the Royal Meadery almost weekly as well.
 
Mmannnnn outrageous amount of hops. You could get just an equally solid flavor with 12 oz in total.
I know its excessive, but the first addition goes in woth active fermentation around 70 degrees. The second at 68 when it slowwing and the third at 64 after fermentation is complete. The different temps at dryhopping, in my opinion, creat a depth i havent gotten with less than a pound and a half.

I mean I’m sure it’s good, I dont doubt that but I truly think you could cut it in half and get a more hop varietal specific flavor and save 20-30 bucks lol

I wasnt very good at the style last time i tried less hops, maybe ill try a batch with less now that ive gotten better
