**** it. I'm a lambic scrub and I can admit it. If any of you want to lend a helping hand to me I would appreciate it. First, I want to say hello to everyone. I'm working my way through this giant thread from the beginning just to learn. I'm here to do so and enjoy drinking the lambic I have had so far tremendously. It essentially a story in every bottle to me unlike any other beers I have consumed including AWAs. I'm reading wildBREWS right now and am in love with it and it is helping me really understand subtle things including the history.

My two favorite lambic experiences so far include a Fou at 09 vintage. It was super fruity and tart. I just got my first bottle and noticed most are recommending to drink it sooner than later. I will do so and provide some notes probably this weekend. And a 3F OG vintage from 13 was obsolete my subliminal.

Drinking one of my "oldest bottles" now and it's a little disappointing. A 2011 3F Golden Blend. The smell seems spot on to what I have
read and experienced in the past. It is that distinct earthy tart funk with unripe fruit I get from most 3F The taste just seems muted. Some tartness but more sweetness. Actually as it warms and open ups I'm enjoying each sip a little more. At first taste got a slight metallic taste, which I have never experienced. Could talk more about it but not necessarily the point.

I guess one question is when you experts taste what do you look for to know a bottle may have not been stored correctly or taken care of well.

Couple things other things. Took the cage off and loud pop. Not a gusher but surprised it was not. Abnormal or not? Does it necessarily mean improper storage? Couple notes about storage.. My storage for it was not ideal but at this time it has to be and I'm working on it. Was In a legit basement since I purchased it when I lived at home but after buying my own place is been in a cabinet away from light with some temp changes but nothing over 70 degrees.

I guess I'm saying too much now. I know there's a question or two above and the post is a mess but back to the college game until a response.

I drank one of my 2011s a few weeks ago and absolutely enjoyed it. Everyone's palate is different, especially when it comes to the nuances of gueuze/lambic. Almost every bottle I've opened had the cork flying out within a few seconds without any gushing, I do not think you bottle was stored improperly.

I think that's about right... It took way too long to write as well... Absolutely the same Zimm!

the last golden blend 2011 bottle i've had almost popped right into my face. the cork already blewed away when i started turning off the cap
 
Popped a 750 Tilquin Quetsche Prunes de Namur this weekend. Most recent bottling. Super tart, acidic and fruity. I have to say I am very impressed with how they are doing, especially considering they only started in 2009. This one and the Mûre were excellent examples of how fruited lambics should taste like.
 
Can someone explain why there is such a large amount of bottle variation in fou foune? It seems like a 50/50 gamble between a apricot bomb and a slightly fruity but more acidic, funky flavor. I'd say about half the bottles were "great" and the others were just "good." I can see why older vintages would have this issue from storage, etc. but right out of the bottle fresh it should all taste similar, no?

Fou Foune is probably my favorite beer. The best one I've ever had was an 05. Don't listen to people. If you like it aged, age it.

I agree. Most of the disappointing Fou experiences I've had have been with young bottles (~1yro or younger). For me, I like it best in the 2-3 yo range, but I've had older bottles that have been stellar too.

And the most disappointing I've had was an 04 at 9 years old because it made my teeth fall out. It's a gamble no matter which way you do it but with less risk, IMO, when it's less than 3 years old.

I whole heartedly agree. I haven't checked either site since last year when I bought a volume pack. I just happened to look this morning after the mention the other day and actually got lucky for once. Unfortunately this is the life now for most people who can't fill a swimming pool with their lambic stash. ;)
 
I had already bought a boos the other day but checked the site and saw Cantillon Gueuze and Golden Blend. I couldn't check out fast enough to get the 3 X 37.5 cl golden blend but I did get a 75cl.

Yeah I'm okay drinking it how I like it but I should at least try it fresh once!
