I call mine Lambics because I use the same wheat/malt base, aged hops and I cultured my yeast from unblended lambics. Not really a lambic but tastes damn close and ZFG.There sure are a lot of lambics these days. I see a bunch of homebrewers making them, I have to wonder what makes them decide to call it a lambic?
Can I just throw some lacto and brett in a beer and call it a lambic? I'm going to. I might make a lambic stout this weekend.

Just go in with me. The bags are the expensive part, the rest is easy plus I've got about 10 gal of my own ready to blend as the jonge.

Most lambic producers don't take kindly to this sort of thing and actively discourage it. That's the reason why you can no longer buy Cantillon or 3F lambic in bags or other containers anymore. People were/are blending it at home and selling it for profit.
