So I received an Inkbird ITC308 temp controller for my kegerator for Christmas. It's plugged into an igloo mini fridge and set at 42 degrees. It's currently sitting at 45 degrees but it's only been plugged in for about 4 hours (the fridge was already at 45 or so when I plugged it in). Do I have to do anything to disconnect the internal temperature probe built into the fridge or does it just take longer than 4 hours to get to 42? The inkbird probe is just running through the door and taped to the sidewall of the fridge. Thanks in advance!

What you should do w/ the fridge is turn its own control to the coldest. Thus, rather than the refrigerator thermostat controlling it, the inkbird will do so, and run as long or as little as needs to since you've taken the fridge's control out of the equation.

Your temperature differentials are set to 2 degrees, so at 45 degrees it should be turning the refrigerator on to run until the temp at the probe falls to 42.

The way mine works is that when the temp reaches the upper differential, which in your case would be 44 degrees, the COOLING outlet on the Inkbird turns on, thus turning on the refrigerator. The fridge will run until the temp at the probe (where is the probe?) falls to the set point, i.e., 42 degrees.

When you initially plug in the inkbird and the refrigerator, the compressor delay will not allow the refrigerator to turn on immediately--it will wait the requisite number of minutes, which by default is 3 minutes.

BTW: Are you certain you have the refrigerator plugged into the COOLING outlet of the inkbird and not the HEATING one?

@mongoose33 thanks for the response. Yeah I have my igloo fridge set to "7" which i assume is the coldest. The "cooling" light is stuck on as well.

It'll work for other people too.

In my keezer I just have the temperature probe dangling off a keg. I have my temp set at 36 degrees, with a set point of 39 degrees. When the temp hits 39 the freezer kicks on, but typically the temp will drop to 34 or even close to 32. Remember, that's the air temp, not the temp of the beer in the kegs. The cooling elements are still cooling when it kicks off, so the temp of the air inside drops a bit further than the target temp.

Some people put their temp probe in a container of water so the freezer doesn't have to cycle as much. I may do that at some point but this seems to work fairly well. If I do that I'll change my set point to probably 37. The beer in the kegs doesn't change temperature anywhere near as much as the air inside the keezer does.
