Maybe it is just mold and it will be ok!?

I wish it were so, but my nose and palate say otherwise. I'm going to ask my master-judge, bacteria expert friend to have a look. She should be able to diagnose for sure.

Maybe you get to do a Brett Barleywine? Seems like it hits one of us each swap! ;)

Sorry for the trouble, man, sucks to hear it! :(

Yep, I will have the official bugged-up Barleywine of HBT. Time to do some research.

Very discouraging.

Pedio doesn't sound as tasty as Brett .... Maybe pitch a bunch of other, competing bugs to make it a happy family? I mean, it's already (presumed) infected....

Yes, Pedio produces diacetyl and Brett is needed to clean that up. Once I confirm that I am not completely crazy, I will pitch some Brett and sock it away.
Brett won't like the hops but who knows.

Just racked mine over to secondary, 6 weeks after brewing. TONS of yeast/trub, so I am down to probably 4.5 gallons. S.G. was 1.024, down from 1.124, so I am looking at ~12.5% ABV. Mine still seems very deceptive on the alcohol front - no burn or anything. You can tell it's high abv, but it's entirely too well hidden for my liver's own good. :mug:

I want to party with you....

I kegged mine, yesterday. That sucker has more body on it than Bo Derek and it twice as tasty. I think I have to hide it from SWMBO if it is to make it to September.

Brew Tracking as of 10/29

Okay, I've PM'd those who have not brewed to see if they are still in.
I've removed anyone who's been MIA for more than four weeks.

With November just a few days away, it's getting near time to lock down the list.

Again, the spirit of this swap to deliver a one-year old Barley to be enjoyed on 9-9-09. I haven't been too much of a stickler, but we need to draw some lines here pretty soon.

Also remember that we will be aligning swap names and arranging shipments some time in late Q1, early Q2 of '09. This will allow enough time for bulk aging and shipping during the cooler weather.

Come on folks...last call is coming up fast. :rockin:

I should be kegging mine sometime this week - need to keg a contest beer first, it's due in 2 days! Crap! Looks like it's shake carb time. :p

Once my 999 is into the keg, I'll probably let it rest for a while, then sometime add in a sack of oak cubes for a week or two, then pull them back out.

Transferred to a 2.5 gallon keg tonight, and had about 26 oz left over, so I'm enjoying it right now. Man, I think this guy is ready right now. Can't wait till actually bottle it and try in a year.

So I've bounced from 1.114 to 1.040. No change in last five days. Can I hope to get this down a little further with some fresh yeast, or should I just call it FG? No temperature change, steady at 67, swirled a bit every other day to keep yeast in suspension...I was rolling with the Cal Ale V, just so you all know....

Good call, I need to pull a grav to see how my Cry Havoc did. It's been sitting undisturbed in primary this whole time.

I actually went from about 1.118 to 1.024. In August I thought it was done at 1.030. I think time will take it down a few more points if that's what you're looking for.

I'm calling mine done at 1.04 too. But then again mine started at 1.150. I would think yours would get a little lower. Maybe your mash was hotter then you thought.

Beersmith estimated my FG at 1.047 but I find beersmith to run a bit on the high side in this category. I mashed at 150-152* for an hour...no mash out, very little sparge. I missed my target OG by 0.052, quite a bit, but I had a huge grain bill filling a 70Q cooler, and not much experience with big beers (which I hope to change soon). I did rack this to secondary already, but I'm wondering if I can pitch some fresh yeast (starter slurry, of course) and get it come down a bit further...

Well, I am not in the swap, but I got my first half of this great recipe brewed up tonight as a commemorative brew for my pending daughter. I did 1/2 of the grain bill and did the second runnings for a "free beer". Going to do it all over again tomorrow. Probably going to boil the BW for an extra 20-30 minutes to get the SG up a little... Round one ended up at 3 1/2 or so gallons at about 1.092. Quick look while cleaning, haven't finished measuring yet.

I don't think it could hurt.

Good God man. Did you have to use a spoon to scoop that wort into the fermenter?

Kinda missed the point of the 9-9-9 huh? (1.119) And I mean that in a good way. :D:D

Uh....I feel really stupid right now.

btw, i had a friend who brews BW's taste my "infected" batch and he said it tastes like a flat young Barleywine. I'm not totally convinced but I am hopeful.
