Ya, something has to do with how when your cooking it you restructure the sugar and when you throw in a crystal(s) that are not consistent it disrupts the process and depending on the stage your at can screw you up, the farther along the easier it is to ruin a batch of it. I remember it from my class in 7th/8th grade where we made the hard candy. I remember making peppermint rock candy in that class. We always used a wooden spoon for it to but I don't remember the reason for that.
