I'm planning a Munich Dunkel - my first attempt. Pretty straightforward grain bill - mostly Munich with some black malt (I have midnight wheat - no Carafa), but where I get hung up is what else to use to get a richer malt flavor. I see a bunch of recipes with melanoiden or Victory malt, but I have neither. I have at my disposal Warminster Amber, Belgian Biscuit, or Briess Aromatic. Which of those 3 should I use (sparingly)?

Assuming you have a good quality German dark Munich malt you don't need, or want, any of those.
 
My favorite dunkel recipe uses mostly barke munich with some pilsner and a touch of carafa 2 but I also use sinamar for added color. The barke munich will give you most of the malt flavor you want. Carafa 2 will give you good color and some roast
