So I thought I'd try my hand at a super-high gravity beer. I made a starter of White Labs Super High Gravity Yeast w/ a drop of olive oil to help the yeasties out. I pitched the starter after it had been fermenting for 2 days into a wort w/ OG 1.121. White labs advised adding yeast nutrient to the wort. My local brewshop didn't have any white labs yeast nutrient so I added two vials of Wyeast beer nutrient beer. I aerated the whole thing (before pitching) w/ an egg beater.
I let the whole thing sit for 17 days, opened it up tonight and...the specific gravity is 1.080. What gives? I don't know yet if the fermentation is stuck since this is my first hydrometer reading, but I figured if things were going well it should've been lower than 1.080. Things seemed to have been going pretty well; it even busted off the airlock valve third day and spilled a little puddle of beer. I pitched the yeast 2 days after its expiration date, but I thought that since it was fermenting in the starter all was well...
Should I be worried about this beer?
