We have lots of Doug Firs here in Oregon and I was wondering if anyone has ever tried brewing with Doug Fir tips? I know you can do spruce tips but I thought it would be fun to try something different.
Bummer! Pine does have a lot of Vitamin C in it. Most conifers do, similar to citrus which is probably why they share a lot of the same tasting notes.
It's actually the seeds within the berries that are toxic. But as a rule, it's best to treat the entire tree as toxic. I remember learning in forestry school that the Kalapuya indians would actually make (and still do) a jam from the berries. Somehow they had a gift for handling the fruit in a safe enough manner that the jam wouldn't be toxic. I've heard it's excellent, but don't believe I would have the faith to try it!
