Last week I brewed a Genesee Cream Ale clone from extract. Some of you might remember I was concerned because my hops came out of the bag.

Ingredients:

4 lbs Muntons Light LME
2 lbs 6-Row American Pale Malt
2 lbs Flaked Maize
0.5 oz. Cluster hops (Bittering)
1 oz. Cluster hops (Finishing)
1 tsp. Irish moss
Wyeast 1056 American Ale

I have a question about gravity. My target OG was 1.50, I got 1.49, figured that was close enough. The target final gravity 1.08. 7 days in primary I seem stuck @ 1.10 after readings the past two nights.

So my question...is it finished fermenting? My plan now is leave it 2 more days and check it again. If 1.10 rack to secondary, if there is a change, wait a few more days. I think that is the plan you will all tell me to stick with, just wanted your thoughts.

it's close enough for me... i'd let sit another week, then cold condition it for a spell. i think that is the cream ale's claim to fame.
