What a weird yeast this is! I've used WLP400 Belgian Wit before owning a microscope and it always makes a very foamy starter. With 1 liter of wort it almost blows off my 3 liter Erlenmeyer flask pushing the aluminum foil on top. This is the second starter I make and after counting cells I cannot propagate more than 50 Billion cells despite Brewer's Friend calculator predicts more than 140 Billions. The way this yeast behaves reminds me of some Kveik and its cells look bigger than most strains too.

Right now my starter concentration is 60M cells / mL. I think I'm gonna pitch the entire thing (that would be a 0.31M cells / mL / °P pitch rate) and hope it behaves like Kveik as well regarding under-pitching.

Are any other yeast geeks out there that counted cells with this strain? What cell concentrations do your starters reach?
