Ok I posted about cold crashing before, but I need more info. Tell me where I'm right or wrong...if I put my carboy in the fridge for about 48 hours the yeast will settle and pack to the bottom, then I pull the beer out and let it warm back to room temp before bottling or kegging it?

Not all of the yeast will settle to the bottom, but some of it will. Also, some things that cause haze like other suspended solids will fall to the bottom. It may take a bit longer than 48 hours, though.

When you go to bottle, no need for it to warm up first and resuspend in the beer. You can bottle it cold just fine. Just store it at room temperature so it will carb up in the bottle.

Keg it cold then pressurize to carbonate. Gases dissolve better at colder temps.
