I have a Belgian witbier that I brewed using White Labs' wlp072 http://www.whitelabs.com/beer/strains_wlp072.html - and it was the most flocculent beer I ever made... I can assume I had a ton of proteins and trub, but the wort remained very hazy and inconsistent. I know a wit is supposed to be cloudy, but will a cold crash help or hurt with getting some of the extra particulates out of the wort for a cleaner transfer to my bottling bucket? OR will it send my yeast to the bottom and make it dormant?

Thanks for the advice,

Matt

NEver cold crash a wit before, but I do cold crash before bottling, a get a clear beer that sometimes takes longer to carbonate, some of the yeast will precipitate but not all, you´ll still have enough yeast to carb in the bottles. Cold crash for not very long (48 -72hs) and you´ll still have some cloudiness to fit to the style.

What Oblivious said. You will still be able to carbonate the bottles after cold crashing. But, I wouldn't bother for a Wit.

Thanks guys, I didn't want to overdo it if I did. Again, I was just concerned about the amount of trub in the primary so I did it for about 24 hours. I'll bottle today and let you know how it goes :)

Thanks again!

Matt
