Hello everyone,

This is my first time posting to The Forum. I have some questions about a cider I was making. My first attempt at cider actually.

I got a cider brewing kit from Midwestern Brewing Company. I then received a 6.5 gallon carboy from a friend. I picked up some freshly pressed cider from our local Orchard. I then proceeded to kill off the yeast with potassium metabisulphate and added some pectic enzyme and yeast nutrient.

I measured my ABV before brewing and it was at a 6%. After a week I checked on The Cider to find out that it was at 1 .000. It was time to move to the secondary. I siphoned off everything except the sediment at the bottom of the primary fermenting bucket into a glass carboy.

I am now about to be 2 weeks into the secondary fermentation process. A friend suggested that if I hold a laser pointer up to the cider filled carboy, and it shines through brightly on the other side that it is about ready for bottling.

Up until a few days ago my cider was clarifying slowly but surely, and a lazer pointer could shine through (at least at the top 3rd) with ease. Last Sunday I was thinking about bottling, but decided to let it set for one or two more weeks. I also saw the beginnings of yeast rafts, which have grown bigger and are bubbly in appearance in the past few days.

Now here we are on Wednesday evening, and my "brew" has become so cloudy that I cannot shine a lazer pointer through to the other side at all.

I will attach some pictures.

What do you guys think? A few of my initial questions are how does it look? Do I need to add a clarifying agent or will the pectic enzymes do that work eventually?

Looks like my current batch after 6 weeks, orange juice like, just starting to clear now...
 
Did you have any temperature changes or add anything to it? It almost looks like the yeast kicked off again... or something else is growing in there. Any chance you forgot to sanitize something?
 
Those don't look like rafts. Just fermentation bubbles grouping together. It is still fermenting if you ask me. Have you taken a gravity measurement again to see if it is below 1?
 
They take longer in a lot of cases to clear up. I let mine usualy sit in the primary (because i dont believe in secondary anything except for fruit/oak beers) .. Ciders ill leave for 8 weeks then keg out of primary
and they are usually clear
