So I’ve been considering a couple different ideas for JAOM; chocolate orange spice mead and blueberry chocolate mead.
Blueberry:
-3.5 pounds wildflower honey
-1 pound organic blueberries (frozen then crushed in cheesecloth)
-1 oz cocoa nibs (present for secondary)
Orange:
-3.5 pounds clover honey
-1 large orange (zested, peeled, and sliced into chunks)
-1 clove
-1 pinch allspice
-1 oz cocoa nibs (secondary)
I fully intend to follow the JAOM process almost to the letter, save the ingredient substitutions and better yeast (lalvin). During secondary I’ll rack the mead onto a cheesecloth full of cocoa nibs. I’ve never worked with cocoa before, or messed with the JAOM recipe much. Is there anything I need to know that might not be horribly obvious?
