Caramelized sugar: Caramel syrups are sold in Europe, giving brewers a variety of choices not available in the United States. Many American brewers use dark candi (rocks) as a substitute, but while the darkest provide a rummy, unrefined character, they don’t come close to replicating the caramelized flavors found in darker Belgian ales.

Been searching Google for the last 10 minutes and finding some promising things that relate to Stan's blip above.

Archer Farms Caramel Coffee syrup 12.7Floz - Also at Target given it's their store brand.

Quai Sud Epicerie De Provence Caramel Syrup - Looks more authentic (From Europe)

Teisseire Barista Caramel Syrup 700 Ml Bottle - Looks even more authentic, darker color is interesting.

Monin Organic Caramel Syrup, 750 ml - The descriptor "Rich Flavoring" draws me in here.


The European ones are the most interesting to me given Stan's caveat "not available in the United States."


These seem like some very interesting supplements to the standard D2 Candi Syrup.


Any thoughts? Other finds?

I've been reading a lot on this topic lately as well. I've gone through "Belgian Ales" and "Brew like a Monk" among the other brewing library standards. From what I've read the type of sugar is important as well. I would imagine it's hard to get the color and flavor you want out of something that's 95% fermentable.

So true. Also, I can't imagine I could make as flavorful of syrups as these producers without having a great large deal of experience with it. It would be like trying to replicate the meal you just had at a five star restaurant with only basic cooking skills, imo.

Looks promising! I'm interested to see what the prices are like once they actually start selling it. Seems reasonable that it should be cheaper than the imported varieties but I guess we'll have to wait and see.

They have already started selling it. If your HB store is worth its salt, it should be in your HB store in stock. If not you can order it online from Norther Brewer, others might have it but I have seen it there. It does make it big difference. I recently rebrewed my dubbel recipe subbing out 75% of the special b, aromatic, and caramunich for the D2 syrup and it is the real deal. The stuff even tastes great from the bottle!

This is not the D2 from darkcandi.com. It's a different company and a similar but different syrup. AFAIK, they have not started selling yet.
