... and there's more info on this approach in his two books + home brew con presentations - adjusting brewing water to pH 5.5 is just one of the interlocking pieces of his brewing process.I acidify all brewing water first with phosphoric acid to 5.5 pH according to Gordon Strong’s suggestion from Sierra Nevada school.
