Bottle conditioning a Belgian Tripel for 2-3 months, question regarding best temp. A 50 degree garage or 68 degree spare room.

Thanks, cheers

68 degrees for 6 months, then move to the cooler garage. Or...
68 degrees for a year, then move to refrigerator for a couple days. Or...
72 degree for 3 months. Or.....

The process of maturing your beer will happen quicker at warm temps and the beer can remain there for as long as you want. The cooler you keep it the longer the process will take. Refrigeate them for at least 24 hours before drinking, longer if you have the space for it.

+1 what RM-MN said. Carbonation is one thing but conditioning is another. Your tripel should carbonate fine in 3 weeks at 68F. But particularly for a higher gravity brew and especially a Belgian, the more time you give it to mature and develop, the more you will be rewarded with a full-flavored beer. Most of my Belgians don't seem to really hit their stride until at least 6 months and frequently longer.
