So we have this fruit product at work called berry up which is supposed to be fresh fruit Puree with only natural ingredients and no preservatives or pastuerization. It's made by Oregon fruit products and list the ingredients as:

Fruit, cane sugar, water, guar gum, xanthan gum, and citric acid

So my question I this. My next beer is a chocolate raspberry creamstout. I want to use this in the secondary. Is there anything I need to do to the Puree to prevent bacterial contamination? Will the alcohol in the 2nd be enough or do I need to boil this or what?

Thanks in advance

Sorry bout the bad phone pics

I'd add a pectin enyzme -- I've pasteurized organic fruit juices to make wine, only to regret not adding something to prevent the the pectin haze.

Other than that -- have at it.

well its a stout so im not really worried of the haze since its pretty dark anyway. I just don't want an infection. Im thinking of adding some water and giving it a short boil then racking on top of that. do i really need to boil or is 170-180 sufficient?
