So we have this fruit product at work called berry up which is supposed to be fresh fruit Puree with only natural ingredients and no preservatives or pastuerization. It's made by Oregon fruit products and list the ingredients as:
Fruit, cane sugar, water, guar gum, xanthan gum, and citric acid
So my question I this. My next beer is a chocolate raspberry creamstout. I want to use this in the secondary. Is there anything I need to do to the Puree to prevent bacterial contamination? Will the alcohol in the 2nd be enough or do I need to boil this or what?
