I'm curvy and nice, and I can add spice, but I'm usually soft & soothing.
I have lots of pluck, and with some luck, I'll soon have you weeping or grooving.
I hang out with gypsies and cowboys too, I hang out with the elite, and I'll hang out with you.
My hair once ran fast, though that is long past, as it's white & no longer growing; and though I don't write,
I can sing quite alright & my notes will soon be flowing.
Now can you see? What can I be, I hope your brain is knowing.

Banesong guessed it: a violin/fiddle. The "pluck" was reference to a style of playing the violin called "Pizzicato," in which the strings are plucked.

A known amount of weight on one side balances out the other
