I have a Barleywine, OG of 1.080, sitting in a carboy in my fermentation chamber. It's been almost 2 months since I brewed it and I'd like to make something else and use that carboy. If it has reached FG, can I bottle and let it age in the bottles or would it be better to leave it alone for a couple more months?

Aging in bottles will be better. In a carboy, even if it is topped off, there is open oxygen exposure to the beer which will cause much quicker staling and oxygen-related off flavors.

Bottle it if you want that carboy to use. i don't see an issue with that. I'm surprised you didnt bottle it already and put it away for aging.

Great! Looks like I'll be bottling & brewing on Friday. Just need to find a nice Christmas beer recipe...
