Hello Gang,

I just did my 3rd homebrew, Its a Samson Cider.
I just dont understand why on the instructions it says 'add yeast 24 hours later'
cant I just add it now?
 
If your wort is at pitching temperature, I say go for it. The only reason I could think of would be to allow wort to cool.
 
There might be something in the can (like campden) which may need to dissipate. I'd follow the instructions they gave you.
 
This is probably the one time I'd say follow the instructions. You never know what underlying factors are involved. I usually pitch a day later after the wort has got down to the mid 60s. I chill the wort with an immersion chiller but it's usually in the mid 70s and I like to pitch cold. There's no problem with waiting a day as long as your sanitation was decent.
 
I had a similar question. My sink broke the other day when I was brewing, so I couldn't run my wort chiller. Instead, I threw my BK in the fridge outside and let it come down to temp by following day, then I pitched my yeast. Hopefully it will be ok. That was 24 hrs from brew day to pitching. It was WLP838, so it needed 50F ferm temp.
