Rice, chicken, boiled eggs (???), and cranberry "sauce". I made enough chicken & rice for leftovers.

I do have fermentation control. I usually set to 61 during day 2 and 3. 65 for 1 and 4. This is obviously the temp of the water circulating around my plastic bucket. Should I go lower?

I use dry yeast and pitch 2 packets directly on all ipa/dipas, usually around 75-80f. But immediately gets temp controlled. So yeast..eh? And I need to buy an O2 bottle?


A little late to the party, but I found that US-05 does best between 65-68 during active ferment. Lower 60s on your water bath is probably ideal. I would wait to pitch your yeast until the beer is under 70f although 75 shouldn't be bad. On the homebrew scale it is damn near impossible to "over pitch" your yeast. O2 and maybe even some yeast nutrient may help. Zinc seems to be one major thing that yeast needs that usually is lacking in wort without added nutrients. If you are doing all those things already it may be a water chemistry issue.

I feel like death. No drinking for me tonight. Gonna take some melatonin and pass the flocc out

Boring flockers tonight.
 
Great night. Went to a celebration for my old football coach. Got to see him and many old and dear friends. Good food, open bar, and they even had Two Hearted on tap. Score.

Got home and had to call the bank, our credit card was compromised. Bummer. At least they caught it and informed us.
 
It was good! Bottled-on date was Oct. 15 of last year, but I don't think a nut brown minds a little age too much. If it did, then I want to taste a fresh one - it's really good!

Brew-day is starting out like a comedy act. Cooking food at the same time, got a little distracted, almost over-shot my strike temps. Hit 164 on the nose, grain might have been a little cold, but I was having a helluva time getting the grain in the pot this time around. Then when the bag got empty enough to clip the corner & pour, I couldn't get the scissors to cut the bag. Sharp kitchen knives to the rescue! Overall, it took far too long to dough-in, and I was trying for 152-154 again, but when I took the temperature after 6-7 minutes, I could only muster up 149.

It's gonna be a dry one! Hopefully the Golden Promise & Golden Naked Oats can make up for it.

OH, apparently, I got worried that this will be too malty for a DIPA, so I used 4# of 2-row, 3# of GP, and 1/2# of GNO. Now I wish I had gone all 7# of GP. We'll see how it turns out, OWOTO.

Microwave water to heat it up next time if you so desire be sure to put something in the container you microwave so the water doesn't explode. It has happened in microwaves with still water never to me but I still put something in. Or boil it on the stove

Winner, winner, chicken dinner. Took all the $ at poker. Small crowd tonight, so it was about $80. And I think I inadvertently cheated one guy off the board...I'll probably tell him I think it was hinky on the hand he went out in and give him $20...but I took his whole stack with about 10% of mine in, so I don't know that it really cost him...everybody still in the money folded, I forgot that he had money in, and I threw my cards to the middle and had to had to recreate my hand from the pile. I couldn't identify which cards were which, but I vouched that the straight was mine. Actually, I didn't cheat him, but if I were him I'd have doubts...

Also revealed too much about my playing style to guys I play with regularly. Two big pots, I checked when I knew I had the pot...only to bet big in the next community card flipped, making them think my hand was based in that card, drawing their money into the center. I need to remember these guys now will be expecting that.
 
Bittering hops in, 10 minutes to go before the 20-minute addition goes in, so I am sitting for a few and having another beer.

Good stuff! Not as good as some of their beers, but good!

Brew-day: I measured my temps at the end of the mash, it read 148. Last time it dropped 4 degrees with the same setup, so maybe I didn't wait long enough before taking the temp the first time. I am betting it was at least 152 at the start, now.

Wort-suckers, then yet another beer - these are mostly lower-ABV beers, and I seem to be going right through them:
