When I was 18 and still lived with my parents, I woke up with a mild hangover and was going to grab a Coke from the garage fridge like 2 mins after I woke up.

My dad was standing next to the trash can choking out a rabbit he had wounded with the pellet gun moments earlier.

'Mornin son.'

'Mornin dad.'

Laughed about it later.
 
Exhaust leak seems to be fixed. Just got back from the in law's a few beers were had.

Heady Topper, Sip of Sunshine, Roads 2 Ruin, and Nugget Nectar.

About to settle in and watch the Walking Dead, night all.

Great beer, the flavor profile is so close to the whiskey oaked rye saison I brewed it's ridiculous.

However, it's ~ 2% higher and hides it well, still plenty of barrel character, but we should prob just do a swap real quick here.

Got 4 varieties of that downstairs, hoping it's pretty decent this year. Last year I wasn't overly impressed with them, but I still have one from 2015 I've been meaning to crack open one of these days hoping it has improved with age.

Question for all you sours brewers. I think i have six gallons to rack of this sour wit to a six gallon carboy but its hard to tell if i really have that much. I really don't wanna end up with a half gallon of head space if i dont have quite six gallons. Anybody out there have success with long term sour aging with this much headspace? My initial thoughts are dont do it but wanted to check your experiences first. I really hate dumping an extra gallon if i end up using a five gallon carboy.


That amount is fine. Just don't open it up every day. Flush with CO2 if concerned.

As an aside, splitting to 5+ 1 can be advantageous for blending. IMO.

Did your brew day clock in under 90 minutes?


I'm about to pitch some belle saison slurry. 6 hours after I started. I did a bunch of stuff while I brewed though. Total brewing work today might clock in at an hour.
 
Not sure how far behind I am, but it's a ways. Killed a growler of my Kölsch that I threw into a mate's keg for an event (apparently wasn't much left, enough to get a growler). Something got screwed up with a jockey box at the event, was pouring foamy and cloudy, but clear and properly carbed via growler. Still a touch fruitier than I'd intended, but decent. Not quite up to my standards. Then almost down to the very end of the last pin of Pale Mild. Was very tasty, and I'll be sticking with 2.5 gallon pins from here on out. Easier to work with than 1 gallon, and no signs of oxidation even if it takes a little longer to kill it. Plus it works out perfectly for the way I've been packaging to fill one of those entirely (actually fits a hair below 3 gallons when completely full) and bottle the rest.

Sounds good man. The vanilla stuck out the most to me. Ive never had a barrel aged beer that had that amount of vanilla from the oak before. So good.
