Doing the same thing myself today 7 days in after a slow start. My WLP833 was too slow.

I think it's junk after too many repitchings so I pitched 2 packs of rehydrated Saflager 34/70 after 2 days of no activity.

SG within 1-2°Plato of expected FG. Upped the setting from 50 to 68F for a gentle rise over the next couple of days. Pils is still bubbling away slowly. I expect it will be 1.007 or 1.008 for a finish.

Nah the helles was pretty much your recipe. Pils is the one that wound up over 1.06 and then I diluted a bit. Figured out why it happened... used the beersmith profile from my old HERMS setup ><, plus think I boiled off more than usual.

I dunno... Bunch of the numbered ones I'm sure. Sucks, they seriously over bittered but it's 2 months old, so there's that. Don't think it would be a hell of a lot better fresh though.

My flanders red also scored well in European Sours with a 37, but I think it was a strong category. The guy who won NHC last year with his gueuze took 1st again with a Framboise.

I think the new BJCP categories help (somewhat). Having a separate category for American Wilds is definitely a step in the right direction.

We just got back from skiing. It was cold, but it snowed all day so the slopes were nice. It wasn't even that busy until the last run. Now we're hanging with the dag by the fire.

I do agree the coffee is a little astringent. I'll have to try one on the warmer side. Still got about ten of those.
