@Gavin just checked on the helles, already down to 1.011 a week in. Bumping it up to give a d-rest even though it tasted great. Shouldve done it a couple days sooner but hadnt gotten around to checking on it. Debating on using gelatin so I can post crystal clear pints as well. Don't like cold crashing in the conical though since I don't have a CO2 feed for it yet. Might anyways though. Could try feeding it at just a couple PSI from my kegerator's tank. Guess I could also gelatin in the keg? Sounds messy though.

Digging the Imperial Harvest yeast I used, gonna harvest some slurry and brew another pils I think. The one I did last month is getting better with age in the keg, but it's still got a slightly estery profile that just doesn't fit a Pils at all. Plus it's too thin despite finishing higher than I'd have liked. Think it's the classic american yeast I'd never used before. Not sure. Want to make a Schwarz or Okto soon as well.
 
Stout kegged, hydro sample sampled. Carb check on peach wheat with no peach to it, and vourlaf underway.

Trying to unfreeze the hose, too, in prep for chilling.


Brave man brewing in this weather

Ham and cheese omelet, bacon and toast eaten now relaxing with a second cup of café. No way I'm brewing today - too damned cold out. Going to be a lazy one for me.

No brewing for me today, but I am smoking a small pork shoulder. And I'm drinking a HB pale with HB tomato soup

Coffee and pancakes after church. Time for chores and hopefully a run. Taking the 10 month old to valentines dinner tonight. I should carry him around the restaurant while he cries telling the happy couples "This is your future!"
 
Major props to my brew-bro. His wife is in town for V-Day, yet they stopped by to see me & he dropped off a 4-pack of DirtWolf.

Sounds like a good plan. What was your OG? It was a big Helles if memory serves. Weren't you up at ~1.06?

Doing the same thing myself today 7 days in after a slow start. My WLP833 was too slow.

I think it's junk after too many repitchings so I pitched 2 packs of rehydrated Saflager 34/70 after 2 days of no activity.

SG within 1-2°Plato of expected FG. Upped the setting from 50 to 68F for a gentle rise over the next couple of days. Pils is still bubbling away slowly. I expect it will be 1.007 or 1.008 for a finish.
